Shrimp Jambalaya

A few nights ago I finally got home from work before the sun went down.
So I took advantage of that and decided to make myself some dinner. You know some REAL dinner not just something I threw in the microwave.

Also I should warn you, I DO NOT know how to cook.

Seriously I can make spaghetti, eggs, and I'm pretty good at throwing a pre-cooked meal in a skillet and heating it up.  
But when it comes to chopping, mincing, measuring, ect. I am an epic failure. That and I just don't really like cooking.  
(Sorry to my future hubby, wherever you are)

Luckily I do know how to follow directions and this Shrimp Jambalaya is something my mom makes.  Only she adds more than just pre-cooked shrimp.  
This was super easy though and tasted super yummy!


You start by buying the Zatarain's Jumbalaya Mix (you didn't think I meant that I made EVERTHING did you?)  Oh and this is our piggy bank that sits on top of the microwave. Isn't he cute!


 I bought some cooked shrimp that I just needed to defrost.


 Chop up the shrimp so its in tiny bit sized pieces. 

Follow the directions on the Jambalaya box to make the rice mix.


Then when you have about 10 minutes to spare in the cooking of the rice throw in your shrimp.
(You can also add sausage and chicken, that's what my momma does.)


Mix it all together and let it cook for another 10 minutes or so.


And WA-LA! You have super yummy Jambalaya ready to go.


It tastes even better the second day when you heat it up in the microwave.

Oh and it makes a yummy lunch for work, that everyone says smells great and is jealous that you are eating it and they are eating a plain old ham sandwich!
